Pok Choy must be one of the most popular leaf vegetables in China, where it has been cultivated for centuries. The name of pok choy comes from Chinese and simply means ‘white vegetable’. Whiteness refers to the crunchy, juicy stalks of the shiny green leaves. Pok Choy has a nice, fresh cabbage-meets-spinach flavor with a hint of mustard. It’s quite low in calories and a good source of vitamins A, C, and K. If Pok Choy didn’t exist, it would obviously have to be invented. Baby leaves are delicious when eaten in raw salads. The bigger leaves taste very good after a short cooking time. Don’t overcook if you want to keep the crunch.

Wild rocket, also known as perennial wall-rocket, is the rebellious version of the common rocket. It’s a good traveler too. Once upon a time, its seeds arrived in Finland in the ballast sand of sailing boats. Wild rocket has long, decorative leaves and a strong peppery and mustard-like flavor that gives an extra kick to milder lettuce leaves. It tastes really good with different types of cheese. Use it to flavor meat dishes and pastas and sprinkle on pizzas or sandwiches. You could also try using wild rocket like spinach: saute or steam it and serve it as a side dish that does not, we repeat, does not taste like baby food.

Thyme, an herb of many virtues, has been around for thousands of years. Nowadays it’s used for cooking and as a home remedy, for example as a cough reliever. Thyme is a somewhat modest-looking herb with small matte green leaves, a fresh fragrance and a minty aroma. If you want a stronger thyme flavour, crush the leaves to release the essential oils. Thyme can stand the heat for a long time, so you can add it to your stews and casseroles before you let them simmer. Komatsuna, or Japanese Spinach Mustard, is a nutritious and beautiful leaf vegetable. It has probably been cultivated in Japan for ages. With its long, bending leaves, komatsuna looks pretty, especially in its baby stage (don’t they all?). It’s hardy and grows fast. It has a nice texture and a gentle green, fresh flavour with a hint of mustard. Komatsuna is also a good source of calcium. You can do with komatsuna whatever takes your fancy. Use it like you would use kale or spinach. Mix a handful of raw baby leaves to salads. The largest leaves can be roughly chopped and wilted on a pan or steamed, added to soups and stews or tossed to pasta.
